Wine review: Soft floral hints add depth to the otherwise straightforward ripe peach and nectarine aromas. There's a good balance in the mouth, with a nice acidic lift and slightly lime edge to cut the sweetness on the finish and close with the faintest hint of honeydew melons.

My review: Clear pink and plum color. Sweet and floral aroma on the nose. Sweet plum, peach, and sweet apple components on the palate which provide medium bodied with medium finish wine. Sweet grape and apple with hint of dry and acidity at the end are well balanced, so that the wine is sweet, but well balanced with acidic and dry finish. It will be a very good appetizer wine with light snacks like light cheese, chocolate dipped strawberry, and just plain dark chocolate.

Wine review: Firm and structured, this is a solid wine, laced with mineral acidity and tight tannins. It has a juicy, blackberry fruit component cutting through the texture.

My review: Blackberry and dark cherry color. Smoky and hint of vanilla on the nose. I can tell that this wine was aged in Oak barrels. Fruit forward, cherry and lemon on the palate with full body structure. This wine had short finish with slight hint of vanilla aroma at the end of the palate which lasts from mid to the end with smooth and dry finish. It will be paired with red meat steak, pork chop with medium to thick sauce, and Korean BBQ steaks

Wine review: Made from 100% Grenache, the 2012 Vina Borgia was fermented and aged in stainless steel. Its medium dark ruby color is followed by abundant notes of strawberries and black cherries offered in a straightforward, medium-bodied, soft, hedonistic, round style. 

My review: Dark purple or dark cherry color. Blackberry and black current like fruity and spicy forward on the nose followed by full bodied with long finish. This wine is dry with medium spicy at the end. This wine is a fruit forward and fruit dominant wine since it was aged in stainless steel barrels. I can pair this wine with any red meat dishes, such as steak, pork rib with medium sauce, and beef brisket.

Wine review: This wine presents subtle notes of spiced apple slices and ripe peaches with hints of freshly baked bread and melon. Light bodied, clean and refreshingly crisp in the mouth, it offers just enough apple and pear flavor concentration, finishing with medium-long persistence.

My review: Light green and yellow color. Black pepper and lemon with hint of caramel aroma on the nose. Okay and acidic components hit the palate with medium black pepper aroma at the end. Medium body and dry with long finish. Lemon and hint of caramel stays throughout the mid to finish. It will be perfect match with creamy seafood pasta with lots of crab meat in it. Semi dry and pepper components will go well with creamy components of the pasta.

Wine review: Subtle aromas of mint, lemon and orange, with a hint of honeysuckle. Dry, understand and focused, offering clean citrus and melon flavors and slow-building sweetness. Finishes dry and brisk, with an echo of lemon.

My review: Light and pale yellow color. Citrus and lemon peel on the nose. Light body with slight hint of lemon aroma hits the palate with smooth, clean, and short finish. Also, this wine has light spicy kick to it on the mid palate. Well balanced between spicy and acidic components will go well with pasta dishes with light cream sauce or even tomato sauce. Any light cheese with fruit will go well too.

Dinner with FAMILY and more!!! - "Home Feast (Cajun Style)"

Okay! Time for the wine dinner with family!!  My entire family decided to visit me and my wife during the spring break, so we planned a wine dinner since I get the double points! =) They drove all the way from NYC, and my brother and my wife decided to be the chef of the day. As soon as they got here, we all went to Kroger to shop all the required ingredients. The main dish was Cajun Boil, and the wine of the day was Sweet Mountain Laurel from Chateau Morrisette winery.

Just by looking at it, it looked so delicious and tasty. I had never tried any real Cajun dish at all, so it was a great opportunity to try it with family members and wine of course!
More detailed step-by-step making process will be presented in this blog, so stay tuned!!

My wife and I picked the wine just because it would go really well with the main dish, and also my mom and grandma were couldn't drink high alcohol, tannic, and dry wine. So, here's our hero wine!!

Sweet Mountain Laurel from Chateau Morrisette, Floyd, VA
This was the wine that made everyone happy. It even made my mom and grandma buy the wine on their way back to NY. Please note that the wine in the group picture below is the same wine with just different label color since the winery changed the label design.
Here's my wine review just by itself:
Clear and light Golden plum color. Very strong aroma of sweet grape hits your nose, but it is very pleasant strike to your nose. I asked more detailed information about this grape aroma at the winery, and they told me it was a "Fox grape." It was not familiar name, and I was told that only people in the Southwest Virginia region call it "Fox grape." The aroma was very similar to the American grape, Concord grape.
Light body, clean, crisp, and sweet grape flavors on the palate. Its very light bodied and well balanced sweet and acid components complement each other. It's a fruit bomb, grape bomb to be exact. Its sweet grape aroma and flavor remains in your palate throughout the entire palate made me smile, and I couldn't stop drinking. It will be a great appetizer wine, and it will also go really well with spicy seafood dishes since its sweet component will balance the hot and spicy component of the food very well.

All the ingredients are all ready to go and waiting for the chef's orders!!
All the major player were in and ready to go. Vegetables, fruits, spices, sauces, and other ingredients are shown. Also you can see the crab legs are being washed and prepped on the top right corner. I realized that cooking was not easy task and required a lot of effort, ingredients, and time. Huge Thanks to my brother, Kyu for cooking a great and awesome meal for us!!

Kyu was preparing his masterpiece by peeling the corn, potato, and more. Also crab legs and sausages were being cleaned and cut into bite size.
My wife came to help with the corns, and she's being a good assistant. Also, you can see the shrimp near the top-center.
Since it was a huge task involving a lot of preparing, washing, and cleaning, my wife volunteered to be an assistant. I tried to help, but got kicked out of the kitchen area due to my poor culinary skill and patience. All of the prepared and ready to go ingredients will go into the big pot shown above.

Since the whole crab was so expensive and too big for the pot, we decided to get a frozen crab legs since it was cheaper and easier to handle and cut into serving size.

For this dish, preparing the vegetables, crab legs, shrimps, and other ingredients were the most time consuming process. It took them almost an hour just to prepare the ingredients

Nothing and no one can be better than mom's cooking and her recipes. That's why mom had to check the progress every step of the way even though Kyu was a pretty good cook already. It's totally okay with me since I was about to enjoy awesome dishes with my family.

Everyone was gathered for the wine dinner with family. Thanks to Kyu for cooking, and thanks to grandma and mom for visiting us all the way from NYC. While Kyu and my wife were making Cajun Boil, mom magically made "Korean California roll" with leftover vegetables and seafood. Wow!!!

We were all happy not only the food and wine was awesome, but also we enjoyed it as a family, very happy one of course. Everyone's face became red except mine. I guess I was born to be a wine drinker after all.
Wow! we finished all the food except a few shrimps and potatos!! Amazing!!!

This wine dinner with family was more than awesome and more than I expected. The wine and food was more delicious with loved ones. 

Here's my review for the wine and food paring:
The white wine had very strong aroma and taste of sweet grape which balanced the hot and spicy seafood dish very well. Whenever I feel hotness on my palate, I was able to wash it away with the wine and the palate was left with sweet grape, so I could continue eating without searching for the pepto-bismol. I think semi sweet or semi dry white wine will be a very good choice for paring with spicy seafood dishes as well. The California roll with white wine paring was also satisfactory and interesting since it was my first wine and sushi paring since the clean and smooth character of the wine matched very well with sushi/roll's clean and fresh taste.

My review: Light and pink plum color. Strong smoke and spicy ginger on the nose with medium body with semi dry component. Balance between citrus and ginger aroma on the palate provides clean and well organized structures. Short finish with ginger component remains longer than expected. Medium hot and dry with balanced acidity at the end. It was not a sweet Riesling, but well balanced acid and dry component provide pleasant finish with some complexity to the wine. It will go well with medium creamy seafood pasta, or any fish with garlic sauce.

Wine review: Well-balanced flavors of dark berries and plums. Spicy fruit finish

My review: Dark and purple red color. Strong black pepper his the nose and it lasts quiet a while. Black pepper, blackcurrant, and black berry hit the palate with strong aroma. Medium body with medium finish. I was able to pick up buttery felling on the palate throughout the entire palate even after the finish. However, the finish was very smooth, buttery smooth! It will be well paired with heavy creamy pasta with seafood or greasy red meat steak or baby back rip bbq with bbq sauce.

Wine review: Rich, fruit forward cherry flavors, soft tannins, a medium body and a smooth velvety finish. Pairs well with creamy soups, salmon, and savory pork dishes.

My review: Dark cherry color. Creamy and vanilla on the nose with little bit of butter aroma component. Subtle sweet and buttery flavor and aroma hit the mid palate and it lasts for a while. Medium body with medium to long finish. The finish was also very smooth with hint of vanilla component at the end. Smooth and also tannic flavors last throughout the entire palate with slight hint of dark cherry. This wine will be well paired with any red meat dishes also chicken with thick creamy sauce.

Wine review: Chardonnay Semillon is a blend of 80% Chardonnay and 20% Semillon. It gives a moderate intensity of melon, guava, apricot and butterscotch aromas. the medium bodied palate provides attractive acidity along with plenty of tropical fruit flavors and a medium-long finish.

My review: Golden light, clear, and yellow color. Strong lemon on the nose. Medium body wine with medium hot on the mid palate. Even though the wine review says this wine has long finish, I was not able to get the long finish at all. It was very short to medium finish. However, I found this wine very well balanced between the citrus and tannic components which provide medium acidic dry wine that will go well with medium cheese or any pasta with seafood meals. It will also go well with strawberry dipped with chocolate deserts.

Wine review: Grapes are meticulously sourced from the grape producers along the Coastal region of the Western Cape ensuring complexity and freshness in the wine. Indwe Sauvignon Blanc is full of layers, balance and persistence. The wine is imbued with tropical and citrus notes, with hints of melon and gooseberry flavors.

My review: Light, clear, and pale plum color. Strong green onion and grass aroma hits the nose with slight hint of citrus as well. Light body with medium hot and spicy component comes forward in the mid palate with the short finish. Light tannic and acid components were present, but not enough to overcome the hotness. It will go well with light to medium cheese or medium thick cream sauce pasta.

Winery Visit - Chateau Morrisette

My wife and I finally decided to visit Chateau Morrisette winery on March 8th, 2014. The journey to get there was not easy at all. We were supposed to participate in 11:00 am tour, but we left our place late, so I was in a hurry to get there on time. When we almost got to the blue ridge parkway, we found that the parkway was closed due to snow. My old GPS couldn't find alternate route, and our phones were out of service. So we decided to go back home. On our way back home near the town of Floyd, I was able to call the winery, and they told me the correct direction to get there. Finally, after almost two hours of brutal and exhausting country road driving, we were able to get there safely.

The beginning of the Blue Ridge Parkway. It looked like the road was cleared and weather was very nice, but we found out in about 5 minutes that the rest of the road to the winery was closed due to too much snow on top of the mountain portion of the road

The park way was closed as you can see the left side of the road was still covered with snow and the gate was closed. So if you plan to visit the winery, make sure that the parkway is open or you will be lost and waste a lot of time trying to find the alternate route.

After numerous calls to the winery, we were able to arrive at the winery. We were late, but we were happy and glad that we got there safely. We missed 11:00 am tour, but they had  1:00 pm one, so we were relieved. The first entrance on the right is the restaurant and the second one is for the winery. Either one will get you to either place, so don't worry =)

The parking lot was not paved, so it was full of mud and melting snow everywhere, so it was kind of hard to walk around the parking lot with just a pair of sneakers. So check the weather condition a day or two before you plan to arrive, so you can be prepared!

The founder of Chateau Morrisette, William Morrisette, passed away on March 4th, 2014 in Greensboro, NC. He was 90 years old.

William Morissette began experimenting with grape growing in the early 1970s on the advice of the Virginia Tech Fruit and Science Department. After graduating from Mississippi State University's Viticulture and Entomology program. He and his wife started making wines in two 5 gallon buckets, one red and one white. He discovered a cave on his property and he decided to installed two tanks to make wine as a hobby, and then he decided to plant a vineyard, so he planted a vineyards up on the lower slope of Sugarloaf mountain. He planted Cabernet Franc, Merlot, and Petit Verdot. They were all red, and he named his red wine "Trilogy" and his white wine "Virginia Riesling."
After His son, David, was graduated from the college studying the viticulture, They started making wines, and David Morrisette became the first winemaker of the family. In honor of his dog, David changed the name of the red wine from Trilogy to the Black Dog, and the sales went up 200%. He also changed label of the white wine from Virginia Riesling to Our Dog Blue to honor his father's dog, and the sales went up 600%. That's when he realized and decided that he put a dog on his wine label.

The grape crusher machines were not operational at the time of visit due to the inclement weather. When they operates, those machines process 20000 pounds of grapes at a time, and the bigger crusher can process up to 40000 pounds of grapes every 75 minutes.

As soon as we walked into the main building, we were encountered by very vintage and classical looking interior of the building. The height of the ceiling was 55 feet from the floor to the top of the ceiling with gigantic metal chandelier in the middle of it. I felt like I was inside of the small castle somewhere in Europe.

The first thing you see is the wines. A lot of wines!! you can choose from the great amount of wine selection with descriptions and prices. Also they sell a lot of wine related items, such as magnets, glasses, mugs, souvenirs, postcards, little toys, wine accessories, fleece, t shirts, and so on.

There were about 10 wine tasting stations in the main building. we paid $8 per person for the tasting at the front counter. There were enough staffs, so that they did 1:1 wine tasting which was very helpful because we were able to ask a lot of questions, so that we could learn as much as we could.

We did 10 different wine tastings and we got to keep the glasses with green dog logo on it. The staffs were all very friendly and knowledgeable, so that we were able to get answers for our questions regarding the characteristic of the wines and their background information

Our winery tour guide showed up on time, and he started explaining the history of the winery and the founder. We were informed that the founder of the winery, William Morrisette was passed away several days ago. He was very kind and humorous, and he answered all the questions we had without hesitation.

As we finished the history portion of the tour, he took us to the back side of the main building which was full of wine barrels, tanks, and all the wine making equipment. Also, this place was full of oak aroma which he forgot to warn us before we entered the facility. =)
When the grapes come in for the first time, they get washed in order to remove yeast on the grapes in order to control the yeast during the fermentation process. Then they go through de-stemer that separates the stems from the grapes. They let the juice setting for a day and begin heating up to 69 degrees, and then the juice will be put into the stainless steel tanks for fermentation process which they yeast and sometimes sugar if necessary. 
The fermentation process takes about 3-4 months in the stainless steel tanks depending on the wine. All the varietal wines go into the American Oak barrels, and they will be aged for 15-18 months.

All the whites other than Chardonnay stay in the stainless steel tanks. Each Oak barrel holds 59 gallons which is equivalent to 295 bottles. Each stainless steel tank holds 6200 gallons and 31000 bottles out of each tank. Each tank has built in heating and cooling liners in order to maintain the constant temperature. Last year, they made 15000 gallons of wine which is equivalent to 750,000 bottles.

The bottling area was separated from the rest of the facility in order to keep it clean and sterile. During the typical bottling week, Monday is the setup day when they setup bottling and labeling machine. From Tuesday through Friday is clean up day when they clean and sanitize every parts of the machines and equipment. Sanitizing is done with only steam and industrial grade Vodka.
The first stage is sanitizing stage of the bottle, and then it goes through the liquid nitrogen blasting in order to remove all the oxygen and air from the bottle. Then the bottles go through the fill station where the wines get filled inside the bottle.

After the bottles get sealed with the corks, they go to the last stage which is labeling and packaging for the shipping.

All the bottled wines stay at the winery storage for about six weeks before they get shipped out. Each beige colored plastic bin holds 1000 pounds of grapes shown in the middle of the picture above.

Chateau Morrisette has been winning various awards since opening and they recently won the Governor's cup and won a sliver on three of their wines. Also 2010 Cabernet Sauvignon won a silver in  Napa valley.

This was my very first winery visit and my wife and I were very impressed and learned a lot of new information about wine, wine making process, and the history behind it. It was a bit of long and tiring drive from Blacksburg due to the poor and hazardous road conditions, but it was well worth it. We will definitely come back for more wine tasting and the restaurant where we will taste fine wines with different kinds of food.

Tasting - Lady Lola

Wine review: In Italy there are several styles of Pinot Grigio and a lot of Moscato but there is only one Lady Lola Pinot Grigio – Moscato blend. Lady Lola Pinot Grigio - Moscato has a straw yellow color with elegant golden highlights. An intriguing style wine, fresh and crisp, which opens with delicate nuances of exotic flavors intermingled with a zesty tropical acidity that compliments the flavorful fruity sweet finish.

My review: Clear and light green color. Zesty lemon and hint of apple on the nose. I couldn't tell if there's body since it was too boring and nothing was noticeable on my palate. Hint of acidic component at the beginning, but no tannic components with medium finish. It's definitely not a good wine, since no balance between fruit and acid components at all. Short finish. It might go well (if any) with light cheese dip with chips or sweet fruits.

My review: Clear yellow and golden color. Light and sweet peach flavor on the palate with slight kick of spice. Clean and crisp peach flavor was sweet and clean at the end. I also was able to pick up hint of plum and apricot at the end. It is very good wine for wine beginners or someone who cannot handle too much alcohol or tannic components. It will go well with spicy food and even just by itself.

Strong lime flavor was well balanced with tannic components and finishes clean and medium long. It will be really go well with any grilled or spicy food.

My review: Lignt and clear pink color. I was able to pick up banana aroma on the nose. Hint of lemon and zesty on the palate. Also it was dry with flavor of fruits, such as strawberry and blackberry. Light body with medium sweet and clean finish. This win will pair well with ham, sausage or chocolate covered strawberry.

Wine review: The wine was brightened with a bit of fresh Chambourcin, while the structure was augmented with the addition of Tannat.  Entrancing aromas of plum and black cherry presage the intensely fruity entry, layered with the character of black tea, baking spices, vanilla and cocoa.  The texture of this deep ruby colored full-bodied wine is silky and emollient; lingering aromas will persist on the palate.  Like all Port-style wines, heritage is fortified and finished sweet, and pairs well with chocolate.  

My review: Dark purple or dark cherry color. Fruity flavors on the nose, such as black cherry, light sweetness, and plum. It was medium/semi dry on the mid palate, and hint of caramel and vanilla was coming through. Well balanced fruit and tannin components with sweet flavor finish. It was hot and full body wine with spicy kick at the end. smooth and medium-long finish. It will go well with some greasy meat dishes, and pasta with thick cream sauce.
